Larry,
If the two Stripe plugins work with different Stripe classes, then they should be able to run simultaneously/concurrently.
If you get a fatal error when trying to checkout using either gateway, then they likely have a Stripe class conflict. Your error_logs will also tell you if there is a Stripe class conflict if you get the fatal error (500 error).
