listing variations are a bit of a mess… im not sure if there is any update on this situation ive been testing my add product side of things and noticed you cant list a price when listing a variable or grouped product.. ive tested on dev.wcvendors.com as well and it doesnt allow you there either… any input?

Did you click on the arrow next to the attribute? I was able to do so on dev:https://www.wcvendors.com/wp-content/uploads/2017/03/devvar.jpg
somethings wrong here… this is what it looks like on the variations tab of my live site.. then you click that arrow and it shows this pop up list of things and when you pick one it asks for a script value…

Ok- when you see the options box (screenshot 1 from your screenshots) click: Create variations from all attributes
Then, for each variation, you should have the drop down box arrow, as I showed you above.
