Looking at one vendor’s shop page, i.e.- http://mydomain.com/vendors/vendorshopnamehere/

The vendor’s shop name isn’t displayed anywhere — is that normal?
Also, just wondering if there’s any way to customize this page a little within the confines of WordPress — for example, is there a way to add a WP sidebar with widget items like categories of products the vendor has in their shop, and a contact form?
Yes, that’s completely normal and working as intended. Ideally, a vendor would customize their page any way they wish using the Shop Settings editor off of their Vendor Dashboard.
Sidebars and Widgets are possible, you would add them to the Shop page that WooCommerce provides. We simply “hook” into this shop page. So, any Widget you have on the shop pages would show up on the vendor shop page, too.
