I’m trying to add some placeholders / descriptions for the various fields when adding a product. As I understand from other threads it’s in the functions.php?

The theme or child theme functions.php file is where you would place the modifications – filters, actions, etc. that you would add in order to change the placeholders or add placeholders or instructions to the product add/edit page.Some fields already have placeholders, so you can just use a filter to change those if you wish.
Other areas you can use the action hooks to add in instructions/text.What areas are you working with?
I’m not familiar with filters and action hooks, how do I edit those?
In the product page I’d like to add descriptions to these:
Product Description
Tags
Product Type
SKU
Manage stock
Attributes
VariationsIn settings it’s these:
Store Name
Store DescriptionI also want to remove this field: Seller Info
