This just pulls the WooCommerce currency symbol as it is set for the main shop (admin) when you set up your WooCommerce.
Editing the core file will not be able to be saved in the same manner as the templates, no.
I’ll see if I can have my team take a look here- one of them may be able to advise, however; this type of customization is a bit outside of our scope, since we did not write the currency conversion plugin so it is difficult to know how to work with this.
